The Boniviri protocol requires that the olives be harvested before they fully ripen and pressed within 12 hours. Why?
Acidity and taste: Olives harvested before full ripeness tend to have lower acidity compared to mature ones. This results in oil with a more delicate and balanced taste, featuring fruity notes and a smoother flavor profile. Aroma: Immature olives retain fresh and intense aromas better, which are then transferred to the oil during the extraction process. This contributes to oil with a more intense and complex fragrance. Stability: Oils produced from immature olives generally have greater stability and longer shelf life compared to those obtained from mature olives. This is because they contain a higher quantity of natural antioxidants, which help protect the oil from rancidity. Nutritional quality: Immature olives contain a higher concentration of nutrients, such as polyphenols and vitamins, which are then transferred to the oil during the pressing process. Consequently, oil obtained from immature olives can offer greater health benefits.
