Behind a good meal, there is a good oil

Extra virgin olive oil is one of the basic foods at the base of the Mediterranean diet.

Sometimes we don't think about it, but oil impacts almost all the dishes we consume every day: choosing a quality one means improving your lifestyle and diet. To be considered extra virgin olive oil, the oil must respect some quality parameters such as a low content of acidity and peroxides, a certain level of oxidative state of the product and the absence of defects in the aromatic profile. Its health properties are numerous: it promotes digestion processes, is a powerful antioxidant, helps against high cholesterol, is rich in vitamins and fights cellular aging.

The cultivation and processing process: in the name of quality and sustainability

Boniviri selects its own extra virgin olive oils from the excellent crops of small Italian agricultural producers. The producers are followed throughout the cultivation process. The olives are brought to the partner mills of the project, which work according to the highest quality standards in order to preserve the nutritional and organoleptic properties of the oil. The packaging has been studied and chosen with attention from Boniviri.

To guarantee the maximum beneficial and organoleptic properties of the oil, Boniviri is committed together with its growers and partner mills to follow a series of stringent rules:


1. Harvesting olives in the best time: when they begin to ripen. This choice reduces the yield of the oil (if less is produced), but guarantees the highest quality


2. Bring the olives to the oil mills the same day of the harvesting in order to keep all the properties


3. Ask the partner mills to clean the machines with respect to the olives that have been crushed before in order to avoid contamination


4. Use cold mechanical processes so as to preserve the properties of the oil


5. Store the oil away from light and heat and protect it from oxidation processes


6. Bottle the oil in the best possible container: glass. An inert material that does not transmit or capture any particles with respect to its content
