THE HISTORY
In the countryside of Rosolini, a few kilometers from Noto, Corrado Bonfanti loves to walk between the centennial olive trees of his land.
He knows them one by one and he proudly tells everything about them. He knows his trees very deeply and his devotion is what makes his oil as a perfect Sicilian balance of flavors, scents and sensations.
Corrado's land has belonged to his family for many years: it is located in a privileged position in the countryside, where olive, almond and carob trees luxuriantly grow.
Corrado is very attentive to all phases of cultivation, harvesting and extraction. He personally cares for the cultivation of olive trees according to the principles of organic farming.
Olives are harvested during the month of September, at the proper time of ripeness. Extraction is carried out at the Ruta Oil Mill, in Castelluccio, using cold extraction procedures that allow the oil's nutritional and organoleptic properties to be preserved.
During this time of year, it is not uncommon to find Corrado at the mill, checking his olives and proudly observing the production of his oil.
