THE HISTORY
The Rosaria Miceli Organic Farm was established in Busieto Palazzolo, a small town close to Trapani, in 1990. In about 20 hectares Rosaria grows ancient Sicilian grains, chickpeas and legumes and olives cerasuola, nocellara and biancolilla variety for oil production. Everythings is cultivated following the organic regulations. The farm grows the "perciasacchi" variety, named after the shape of the grain that used to pierce the burlap sacks that contained the wheat. The other variety is called the senatore cappelli variety. From the beginning, Rosaria chose to grow ancient grains to protect biodiversity and the local natural heritage.
She adopts the technique of crop rotation: by alternating wheat with legumes to make the soil more fertile, the wheat grows and develops without the use of chemicals. In addition, the high height of wheat - they reach 1.80 mt - can naturally combats weeds and does not require pesticides and chemical fertilizers. A choice that benefits the environment and consumers.
The nutritional benefits of Sicilian grains are many: the protein content is higher than modern ones. They have a different gluten structure, which makes them easier to assimilate and less toxic for the body. In addition, ancient grains are rich in antioxidants, minerals and polyphenols. In 2020, with the help of a stone mill and an artisanal pasta factory, Rosaria started to produce flour and pasta. The pasta process is conducted at low temperatures, preserving germs, vitamins, fibers and minerals, so the nutrients are gonna stay the same in the final product, weather during industrial process most of them will be lost.
