THE HISTORY
On the slopes of Europe's highest volcano, the lands of Azienda Agricola Virzì lie.
A century-long tradition, handed down to the youngest member of the family, Davide, a lawyer with a passion for agriculture and extra virgin olive oil.
In a privileged location, more than 700 meters above sea level, the farm is dedicated to the organic cultivation of olives, almonds and pears. The aim of the business is to preserve biodiversity, to protect and promote the native varieties of this wonderful part of Sicily.
Due to the height above sea level, the olive trees are naturally protected from flies and pests so the use of chemicals is not necessary. The olives are harvested while still green, in order to preserve their nutritional properties and ensure a high level of polyphenols. The presence of the volcano, and the lava soils, gives the olives an abundance of minerals and nutrients.
The result is an oil with strong flavors and persistence of aromas over time.
